No1=UNRIPE PLANTAIN PORRIDGE

This is one of the popular meal in Nigeria,it is a complete meal as it contains almost all the classes of food,ranging from protein,to vitamin,it is a good source of iron and a perfect meal for the night.

INGREDIENTS
*unripe plantains (as many as you want)
*vegetable (ugwu leaf,chopped)
*Blended red bell pepper
*chopped onion
*a hand full of crayfish
*water
*seasoning cubes
*salt to taste
*1½ cooking spoon of palm oil
*boiled fish|roasted fish
*cow skin (ponmo) diced.

METHOD
**peel the plantain and dice it to desired size
**pour into a clean pot
**add the onion,seasoning cubes,salt,blended pepper and boil for few minutes for it to soften.
**add the fish,crayfish and diced ponmo,cover for few minutes
**add the oil and stir the porridge
**lastly add the vegetable.
Your plantain porridge is ready to be served.

No2=YAM AND FISH STEW.

Yam and fish stew is one very delicious Nigerian dish and suitable for dinner,it is not time consuming and it is easy to prepare.

INGREDIENTS
*yam
*salt
*pepper
*onion
*seasoning cube
*fresh fish
*Thyme and curry
*vegetable oil
*tomato
*water.

METHOD
**peel the yam,cut to desired shape nd size
**place it in a clean pot,add salt and water and allow it to boil.
**dip a fork to know if it is tender, if yes,drain the water from the yam and the yam is ready.
**blend the tomato,pepper and onion together
**heat the blended tomato,pepper and onion to make it kinda dry.
**put the washed fish in a clean pot,add curry,thyme,seasoning cubes and salt,little water and steam the fish
**put a clean pot on heat,add little vegetable oil,allow it to be hot and pour the blended pepper,tomato and onion in the pot of vegetable oil,allow it to fry and stir it consistently to avoid it getting burnt
**separate bones away from the fish,mash the fish and add it in the fried sauce add seasoning to taste and allow it to fry for few seconds.Your fish stew and yam is ready
NOTE:it is also called fish sauce.

NO 3= RICE AND VEGETABLE SOUP

INGREDIENTS
*rice
*salt
*seasoning cube
*onion
*locust bean(optional)
*palm oil(1½ cooking spoon)
*bonnet pepper
*fish and meat
*cow skin (ponmo) diced
*vegetable (either green leaf or any leaf of choice)
*water.

METHOD
**rinse the rice thoroughly till the water is clear
**place it inside a clean pot,add water and salt,allow it to boil for twenty minutes.
**check the rice if it is soft,if soft to your taste,sieve the water away.
**place on heat and allow it to dry,if dried it is ready
**blend the tomato,pepper and onion
**wash and chop the vegetable \leaf
**steam meat with seasonings
**steam fish with seasonings
**wash and dice the ponmo
**place a clean pot on heat,pour palm oil into it
**allow it to get hot,if hot pour the palm oil into it
**allow it to get hot,if hot,pour the blended tomato,pepper and onion into the pot,allow it to fry a bit,add the boiled meat and its stock into it,add only the fish stock into it (without the fish),add seasoning and allow it to steam.
**after five minutes add the locust bean and diced ponmo, cover for two minutes,allow it to dry a bit cause the vegetable will still add water into it
**add the vegetable and stir,cover for two minutes,then add the fish, lastly to avoid it from scattering your vegetable is ready.

No 4=SPAGHETTI AND BEEF STEW

INGREDIENTS
*spaghetti
*beef
*salt
*seasoning cubes
*vegetable oil
*pepper,tomato and onion
*curry and thyme.

METHOD
**get a clean pot
**break the spag to your desired length inside the pot add water and salt and place it on the heat.
**allow it to boil,when boiled sieve it and pour it back into the pot so as to make it dry. The spag is ready.
To make the beef stew
**blend pepper,tomato and onion together
**wash the beef,put water into a clean pot, add onion,seasoning cubes,salt, curry, thyme and water,place it on heat and allow it to steam
**put a clean pot on heat,pour the vegetable oil inside
**add sliced onion (optional) first, then add the blended tomato and pepper
**allow it to fry and add salt with seasoning cube
**add the meat stock,cover and allow it to steam,make it look a bit dry before adding the meat,stir together,food is ready.

NO 5= DODO AND FRIED EGG

Dodo and fried egg is a common and easy to make dish in Nigeria, it is an all purpose food in that,it can serve as breakfast, likewise as lunch and as dinner,it is a light food,anyday you have a stocked stomach and you still feel like taking dinner,you can try dodo and fried egg,it is mouth watering and irresistible.
INGREDIENTS
*Ripe plantain
*vegetable oil
*onion
*salt and seasoning cubes
*pepper and tomato
*Eggs

METHOD
**peel the plantain
**cut to desired shape (I prefer the round shape)
**season it with salt (optional)
**place a frying pan on heat
**pour the vegetable oil into the frying pan,when hot place the plantain into the hot oil,as many as it can contain,if that side is light brown in colour,flip over to the other side,allow it to be light brown too, remove from the oil
**continue the process until all the plantain is fried.
To make the egg
**slice your tomato,pepper and onion
**put a frying pan on it
**pour a cooking spoon of vegetable oil into the fry pan
**when heated, add the sliced onion,tomato and pepper
**add seasoning cube and salt to taste
**allow it to fry
**while frying,break your egg into a clean bowl and whisk it.
**pour the whisked egg into the frying sauce.
**allow it to fry,flip over and allow the other side to fry
FOOD IS READY

NO 6=BOILED POTATO AND VEGETABLE STEW.

INGREDIENTS
*potato
*vegetable leaf (ugwu)chopped
*pepper(chopped)
*shredded smoked fish
*1large onion chopped
*1½ cooking spoon of vegetable oil
*salt and seasoning cube
*Tomato (chopped)
*fried meat
*water
METHOD
**Get a clean pot,peel the potato,rinse it and place it inside the pot
**add salt and water and place it on heat
**boil for fifteen minutes,check if tender to taste,if tender,the potato is ready.
To make the vegetable stew
**heat the oil
** when the oil is hot,add the chopped onion,tomato and pepper to it,fry for like two minutes
**Add the seasoning cube and salt and stir,and add the fish and fried meat,allow it to fry for five minutes.
**then add the ugwu and stir,the food is ready.

NO 7=OKRA SOUP AND SEMOVITA

INGREDIENTS
*okra
*two cooking spoon of oil
*fish,smoked or boiled
*vegetable
*seasoning cube and salt
*dry pepper
*diced ponmo
*grounded crayfish

METHOD
**put a pot on heat,pour in water and boil,if the water is boiled,pour in the semovita powder and stir concurrently
**when thick and not easy to stir with one hand,it is firm enough enough then,add little water and cover it to steam for three minutes,stir again and it is ready.
To make the okra soup
**cut the okra into tiny pieces
**boil the fish
**grind the crayfish and dry pepper
**wash the vegetable and chop it
**pour the palm oil into a clean pot, heat the oil and pour in the diced okra fry it and then add the fish stock
**add the seasoning cube and salt
**add the grounded pepper and crayfish
**add the fish and diced ponmo
**allow to cook
**then add the vegetable
It is ready.

NO 8=AMALA AND OKRA SOUP

(use semovita and okra soup as a guide line)

Amala is good for dinner because it digests fast.

NO 9=YAM PORRIDGE (use plantain porridge as guideline)

NO 10=WHITE RICE AND BEEF STEW (both recipes are already stated above)
