Egg stew is sometimes mistaken for Tomato Omelette, they are both different though they are prepared with the same ingredients but not in the same quantity. Tomato Omelette is manly of eggs while egg stew has more of tomatoes. Egg stew is not set like Tomato Omelette.
Egg stew is very simple and fast to prepare. It is eaten with some Nigeria stable food.
Ingredients for Egg stew
a. 2 Eggs
b. 4 medium plum tomatoes (Tomato Jos)
c. 2 cooking spoons of vegetable oil
d. 1 stock cube
e. Salt & Dry Pepper (to taste)
f. 1 medium onion
Directions on how to prepare Egg stew
a. Wash the tomatoes , remove the seeds and slice in tiny bits
b. Wash and slice the onions into tiny bits
c. Crack open the eggs into a deep late and beat , add a pinch of maggi to it and set aside
d. Place the dry pot on heat and pour in the vegetable oil, when hot , reduce the heat to medium
e. Add the onion, stir fry for 2 minutes
f. Then add the tomatoes, stir for a while and cover the pot to cook for 5 minutes so the the onion and the tomatoes does not dry up fast. stir from time to time
g. After about 5 minutes , add the ‘grinded’ pepper, salt and seasoning to taste
continue stirring until the tomatoes separated from the oil
h. Then go ahead and pour the egg in a circular direction. Do not stir. Cover the pot to turn heat to low so as to allow the cake. I bet you will love it lumpy rather than mushy
i. Egg stew can be served with boiled yam and potatoes, white rice, fried plantain, fried potatoes, fried yam and bread
